Ingredients

For the Casserole:

  • 1 cup uncooked long-grain white or brown rice
  • 1 pound lean ground beef or turkey
  • 2 tablespoons taco seasoning
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese (or pepper jack for heat)
  • 1 can (15 oz) black beans, rinsed and drained
  • 3 green onions, chopped

Instructions

  1. 1. Preheat Your Oven: Preheat your oven to 350°F (175°C).
  2. 2. Prepare the Rice: Cook the rice according to package instructions until fluffy.
  3. 3. Cook the Meat: In a large skillet over medium heat, brown the ground meat until fully cooked. Drain excess fat, stir in taco seasoning and diced tomatoes, and let it simmer for about five minutes.
  4. 4. Combine Ingredients: In a large mixing bowl, mix the cooked rice with the meat mixture, black beans, and half of the shredded cheese until well combined.
  5. 5. Assemble Your Casserole: Spread the mixture evenly in a greased baking dish and sprinkle remaining cheese on top.
  6. 6. Bake and Enjoy: Bake uncovered for about 25-30 minutes or until bubbly and golden. Allow to cool slightly before serving, garnished with chopped green onions.
