  • 1 lb lean ground beef (or turkey)
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 28 oz canned tomatoes (whole or diced)
  • 2 tbsp tomato paste
  • 1 cup low-sodium beef broth
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

For the Pasta:

  • 12 oz spaghetti or pasta of choice

Instructions

For the Sauce:

  1. 1. In a large pan over medium heat, add a splash of olive oil. Sauté chopped onions, carrots, and celery until soft and fragrant (about 5 minutes).
  2. 2. Stir in minced garlic and cook for 1 minute until golden.
  3. 3. Add ground beef to the pan. Break apart with a spatula and cook until browned evenly (approximately 6-8 minutes).
  4. 4. Pour in canned tomatoes and tomato paste; mix well. Add beef broth and dried herbs, then let it simmer on low heat for at least 30 minutes.
