For the Sauce:
- 1 lb lean ground beef (or turkey)
- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 28 oz canned tomatoes (whole or diced)
- 2 tbsp tomato paste
- 1 cup low-sodium beef broth
- 2 tsp dried Italian herbs (oregano and basil)
- Salt and pepper to taste
For the Pasta:
- 12 oz spaghetti or pasta of choice

For the Sauce:
- 1. In a large pan over medium heat, add a splash of olive oil. Sauté chopped onions, carrots, and celery until soft and fragrant (about 5 minutes).
- 2. Stir in minced garlic and cook for 1 minute until golden.
- 3. Add ground beef to the pan. Break apart with a spatula and cook until browned evenly (approximately 6-8 minutes).
- 4. Pour in canned tomatoes and tomato paste; mix well. Add beef broth and dried herbs, then let it simmer on low heat for at least 30 minutes.
- 5. Season with salt and pepper to taste.
For the Pasta:
- 6. While sauce simmers, boil salted water in another pot. Cook spaghetti according to package instructions until al dente (around 8 minutes).
- 7. Drain pasta and gently fold it into the sauce to combine.
