Instructions
- 1. Preheat the Oven
- Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- 2. Sauté the Onions
- In a skillet over medium heat, melt the butter and add sliced onions. Stir occasionally until golden brown, about 15-20 minutes.
- 3. Season and Brown the Chicken
- While the onions cook, season chicken breasts with salt, pepper, and dried thyme. In another skillet, heat oil over medium-high heat and sear each side of the chicken until golden brown, about 4-5 minutes per side.
- 4. Assemble the Casserole
- Place browned chicken in the prepared baking dish. Pour beef broth over the chicken and top with caramelized onions. Sprinkle Gruyère cheese generously on top.
- 5. Bake
- Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden.
