- 3 large eggs
- 1 cup shredded cheddar cheese or pepper jack cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- 1. Prepare the Potatoes: Heat olive oil in a large skillet over medium heat. Add diced potatoes and season with salt and pepper. Cook for about 15-20 minutes until golden brown and tender.
- 2. Add the Sausage: Push the cooked potatoes aside and add sliced sausage to the skillet. Cook for about 5 minutes until browned.
- 3. Sauté the Vegetables: Add diced onions and bell peppers to the skillet alongside the sausage. Sauté for an additional 5 minutes until softened.
- 4. Cook the Eggs: Create space in the skillet by pushing the potato-sausage-veggie mixture aside. Crack eggs into the empty space, cover with a lid, and steam for about 5 minutes until yolks are set to your liking.
- 5. Melt the Cheese: Sprinkle shredded cheese over the entire skillet and cover again for another minute until cheese is melted.
- 6. Serve: Carefully portion out onto plates and garnish with fresh herbs if desired.
