For the Squash:
- 1 medium acorn squash
- 2 tbsp extra virgin olive oil
- 2 tbsp brown sugar
- 1 tsp cinnamon
- Salt to taste
- Pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. Slice the acorn squash in half lengthwise and scoop out the seeds.
- 3. Drizzle olive oil over the cut sides of the squash. Sprinkle generously with brown sugar, cinnamon, salt, and pepper, rubbing in the seasonings.
- 4. Place the squash halves cut-side down on the prepared baking sheet and roast for 30-35 minutes until fork-tender.
- 5. Flip the halves so they are cut-side up and roast for an additional 10-15 minutes until golden brown.
- 6. Serve warm, optionally drizzling with more olive oil or honey if desired.
