Instructions

- 3. In another bowl, beat together the granulated sugar, brown sugar, pumpkin puree, eggs, and vanilla extract until smooth.
- 4. Gradually add the dry ingredients to the wet mixture and stir until just combined to avoid overmixing.
- 5. Drop dollops of batter onto the prepared baking sheet about two inches apart.
- 6. Bake for about 12–15 minutes until the edges are lightly golden.
- 7. Allow cookies to cool on the baking sheet for five minutes before transferring them to wire racks.
