Instructions

  2. In a medium saucepan, bring vegetable broth to a boil over medium heat. Stir in the pearl couscous, reduce heat to low, cover, and simmer for about 10-12 minutes until tender.

  4. While the couscous cooks, heat olive oil in a large skillet over medium heat. Add diced bell peppers, zucchini, and cherry tomatoes; sauté for 5-7 minutes until softened.
