For the Roast:
- 3–4 pounds chuck roast
- 1 cup low-sodium beef broth
- 1 cup pepperoncini peppers (with some juice)
- 1 packet Italian dressing mix
- 2 tablespoons unsalted butter
For the Sauce:
- 1 packet onion soup mix
Instructions
- 1. Sear the Roast:
- Turn your Instant Pot to “Sauté” mode. Add a splash of oil and heat. Sear the chuck roast for about 4-5 minutes on each side until browned.
- 2. Add Flavor Bombs:
- Remove the roast and pour in the beef broth, scraping up any brown bits from the bottom with a wooden spoon. Return the roast to the pot.
- 3. Spice It Up:
- Sprinkle the Italian dressing mix over the roast, then add pepperoncini peppers and onion soup mix.
- 4. Butter It Up:
- Place two tablespoons of unsalted butter on top of the ingredients.
- 5. Pressure Cook:
- Seal the lid of your Instant Pot and set it to “Manual” mode at high pressure for about 60 minutes. Allow for natural pressure release for another hour.
