  • 34 pounds chuck roast
  • 1 cup low-sodium beef broth
  • 1 cup pepperoncini peppers (with some juice)
  • 1 packet Italian dressing mix
  • 2 tablespoons unsalted butter

For the Sauce:

  • 1 packet onion soup mix

Instructions

  1. 1. Sear the Roast:
  2. Turn your Instant Pot to “Sauté” mode. Add a splash of oil and heat. Sear the chuck roast for about 4-5 minutes on each side until browned.
  3. 2. Add Flavor Bombs:
  4. Remove the roast and pour in the beef broth, scraping up any brown bits from the bottom with a wooden spoon. Return the roast to the pot.
  5. 3. Spice It Up:
  6. Sprinkle the Italian dressing mix over the roast, then add pepperoncini peppers and onion soup mix.

  8. Place two tablespoons of unsalted butter on top of the ingredients.
