For the Chicken:

- 1/2 cup Korean BBQ sauce
For the Toppings:
- 2 cups shredded Napa cabbage
- 1/2 cup pickled carrots
- 1/2 cup pickled radishes
- 4 toasted brioche buns
- Optional Toppings:
- Sliced jalapeños
- Fresh cilantro
Instructions
For the Chicken:
- 1. Marinate chicken thighs in half of the Korean BBQ sauce for at least 30 minutes.
- 2. Heat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until fully cooked and internal temperature reaches 165°F (75°C). Discard leftover marinade.
For the Toppings:
- 3. While chicken cooks, shred Napa cabbage and prepare pickled carrots and radishes.
- 4. Toast brioche buns on a skillet or grill until golden brown.
For Assembly:
- 5. Spread remaining Korean BBQ sauce on both sides of the toasted buns.
- 6. Layer juicy chicken on the bottom bun, followed by shredded cabbage, pickled veggies, jalapeños (if using), and cilantro.
- 7. Top with the other half of the bun and serve immediately.
