For the Crust:
- 1 lb pizza dough (store-bought or homemade)
For the Filling:
- 2 cups fresh spinach
- 5 cloves garlic
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
For Topping:
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/4 cup toasted pine nuts
Instructions
For the Crust:
- 1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
For the Filling:
- 2. Wrap peeled garlic cloves in foil with a drizzle of olive oil. Roast in the oven for 20-25 minutes until soft.
- 3. Sauté fresh spinach in a little olive oil for about 2 minutes until wilted. Set aside.
- 4. In a bowl, mix ricotta cheese with salt, pepper, and oregano.
For Assembly:
- 5. Roll out pizza dough on a floured surface to your desired shape and transfer onto parchment paper.
- 6. Spread the ricotta mixture evenly over the dough.
- 7. Smash roasted garlic cloves slightly and mix them with sautéed spinach. Spread this mixture over the ricotta layer.
- 8. Crumble feta cheese over the top and sprinkle with toasted pine nuts.
- 9. Bake for 12-15 minutes until golden brown and bubbly.
