For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
For the Potatoes:
- 1.5 lbs baby potatoes, halved
- Salt and pepper to taste
- 2 tsp dried Italian herbs (oregano, thyme)
Instructions
For the Chicken:
- 1. Preheat your oven to 400°F (200°C). Prepare a baking dish or sheet pan with nonstick cooking spray.
- 2. Season each chicken breast with salt, pepper, and dried Italian herbs. Rub the seasoning in well.
- 3. In a bowl, combine minced garlic and olive oil until blended.
- 4. Place halved baby potatoes in the baking dish alongside the seasoned chicken breasts. Drizzle with the garlic-olive oil mixture and toss gently to coat.
- 5. Generously sprinkle grated Parmesan cheese over the chicken and potatoes.
- 6. Bake for approximately 25-30 minutes or until chicken is cooked through (165°F/75°C) and potatoes are fork-tender. Serve warm, drizzling with any remaining juices from the pan.
