  • 2 tsp dried Italian herbs (oregano, thyme)

Instructions

For the Chicken:

  1. 1. Preheat your oven to 400°F (200°C). Prepare a baking dish or sheet pan with nonstick cooking spray.
  2. 2. Season each chicken breast with salt, pepper, and dried Italian herbs. Rub the seasoning in well.
  3. 3. In a bowl, combine minced garlic and olive oil until blended.
  4. 4. Place halved baby potatoes in the baking dish alongside the seasoned chicken breasts. Drizzle with the garlic-olive oil mixture and toss gently to coat.
  5. 5. Generously sprinkle grated Parmesan cheese over the chicken and potatoes.
