Instructions
For the Sponge:
- 1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
- 3. In another bowl, beat eggs until frothy and mix in vanilla. Gradually combine both mixtures until smooth.
- 4. Spread the batter evenly onto the prepared baking sheet and bake for 12-15 minutes or until just set.
- 5. Once baked, cool slightly before rolling it up in parchment paper to maintain its shape.
For the Filling:
- 1. While cooling, whip heavy cream with powdered sugar until soft peaks form. Reserve some whipped cream for decoration.
- To Assemble:
- 1. Unroll the cooled sponge carefully and spread half of the whipped cream evenly over it.
- 2. Roll it back up gently and place it on a serving platter.
- 3. Pour warm chocolate ganache over the rolled cake, allowing it to drip down.
- 4. Serve slices adorned with extra whipped cream.
