- 3 tbsp peanut butter (creamy or crunchy)
- 2 tbsp fresh lime juice
- 2 tbsp water (to adjust consistency)
Instructions
- 1. Prepare the Noodles: Soak the rice noodles in warm water for about 10 minutes until soft but still slightly firm. Drain and set aside.
- 2. Chop the Vegetables: Cut bell peppers, carrots, and snap peas into bite-sized pieces.
- 3. Create the Sauce: In a bowl, whisk together soy sauce, peanut butter, lime juice, and water until smooth. Adjust to taste if necessary.
- 4. Stir-Fry the Vegetables: Heat oil in a large skillet over medium-high heat. Add minced garlic and sauté for about a minute until fragrant. Add chopped vegetables and stir-fry for another 3–4 minutes until tender-crisp.
- 5. Combine Everything: Add drained noodles to the skillet along with the sauce. Toss gently to coat all ingredients evenly.
- 6. Serve: Transfer to plates or bowls and garnish with crushed peanuts or chopped cilantro if desired.
