Ingredients

  • – Pasta: 8 oz rotini or penne pasta
  • – Cherry Tomatoes: 1 cup, halved
  • – Cucumber: 1 cup, diced (preferably English)
  • – Olives: 1/2 cup Kalamata, pitted and sliced
  • – Red Onion: 1/4 cup, thinly sliced

For the Dressing:

  • – Olive Oil: 1/4 cup
  • – Lemon Juice: 2 tbsp
  • – Italian Herbs: 1 tsp (dried)
  • – Salt: 1/2 tsp
  • – Pepper: 1/4 tsp

Instructions

  1. 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down.
  2. 2. Chop Your Veggies: While the pasta cools, chop the cherry tomatoes, cucumber, red onion, and olives into bite-sized pieces.
  3. 3. Prepare the Dressing: In a mixing bowl, whisk together olive oil, lemon juice, Italian herbs, salt, and pepper until well combined.
