Ingredients
- – Pasta: 8 oz rotini or penne pasta
- – Cherry Tomatoes: 1 cup, halved
- – Cucumber: 1 cup, diced (preferably English)
- – Olives: 1/2 cup Kalamata, pitted and sliced
- – Red Onion: 1/4 cup, thinly sliced

Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down.
- 2. Chop Your Veggies: While the pasta cools, chop the cherry tomatoes, cucumber, red onion, and olives into bite-sized pieces.
- 3. Prepare the Dressing: In a mixing bowl, whisk together olive oil, lemon juice, Italian herbs, salt, and pepper until well combined.
- 4. Combine Everything: In a large bowl, add cooled pasta along with chopped veggies. Pour over the dressing and mix gently until everything is well coated.
