Description

Warm up with this comforting cabbage soup, bursting with fresh flavors and vibrant veggies. Perfect for chilly evenings or a nourishing meal prep!


Ingredients

For the Soup:

  • 1/2 head Green Cabbage, chopped
  • 23 Carrots, sliced
  • 2 stalks Celery, finely chopped
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 can (14 oz) Diced Tomatoes
  • 6 cups Vegetable Broth
  • 2 Bay Leaves
  • 2 tsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. 1. Prep Your Veggies
  2. Wash and chop all vegetables into bite-sized pieces.
  3. 2. Sauté Aromatics
  4. In a large pot over medium heat, add olive oil. Toss in diced onions and minced garlic; sauté until fragrant and golden, about 3 minutes.
  5. 3. Add Cabbage & Other Veggies
  6. Stir in chopped cabbage, carrots, and celery. Cook for another 5 minutes until they start to soften.
  7. 4. Pour in Broth & Tomatoes
  8. Add vegetable broth and canned tomatoes along with bay leaves. Stir well.
  9. 5. Season & Simmer
  10. Season with salt and pepper to taste. Bring to a boil, then reduce heat and let it simmer for at least 30 minutes.
  11. 6. Serve & Enjoy
  12. Remove bay leaves before serving. Ladle into bowls and enjoy!
