For the Soup:
- 1/2 head Green Cabbage, chopped
- 2–3 Carrots, sliced
- 2 stalks Celery, finely chopped
- 1 large Onion, diced
- 3 cloves Garlic, minced
- 1 can (14 oz) Diced Tomatoes
- 6 cups Vegetable Broth
- 2 Bay Leaves
- 2 tsp Olive Oil
- Salt and Pepper, to taste
Instructions
- 1. Prep Your Veggies
- Wash and chop all vegetables into bite-sized pieces.
- 2. Sauté Aromatics
- In a large pot over medium heat, add olive oil. Toss in diced onions and minced garlic; sauté until fragrant and golden, about 3 minutes.
- 3. Add Cabbage & Other Veggies
- Stir in chopped cabbage, carrots, and celery. Cook for another 5 minutes until they start to soften.
- 4. Pour in Broth & Tomatoes
- Add vegetable broth and canned tomatoes along with bay leaves. Stir well.
- 5. Season & Simmer
- Season with salt and pepper to taste. Bring to a boil, then reduce heat and let it simmer for at least 30 minutes.
- 6. Serve & Enjoy
- Remove bay leaves before serving. Ladle into bowls and enjoy!
