- 3–4 cloves fresh garlic, minced
- 1 cup heavy cream (or half-and-half)
- 1 cup sun-dried tomatoes (packed in oil)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
For Seasoning:
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- 1. Preheat Your Pan: Heat a large skillet over medium-high heat and add olive oil until shimmering.
- 2. Sear the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Sear each breast for about five minutes per side until golden brown. Remove from the pan and set aside.
- 3. Create the Sauce: In the same skillet, add minced garlic and sun-dried tomatoes. Sauté until fragrant (about one minute). Stir in heavy cream until smooth.
- 4. Incorporate Spinach & Cheese: Add fresh spinach to the sauce and stir until wilted. Mix in grated Parmesan cheese until well combined.
- 5. Combine Everything: Return seared chicken to the skillet, allowing it to simmer in the sauce for about five minutes.
- 6. Serve & Enjoy: Transfer onto plates with extra sauce drizzled on top. Pair with crusty bread or pasta for a complete meal.
