- 1/4 cup low-sodium soy sauce
- 3 cloves fresh garlic (minced)
- 1 tbsp fresh ginger (grated)
- 2 tbsp vegetable oil
For the Toppings:
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup sliced green onions
- 1 cup sliced peppers or carrots
Instructions
- 1. Cook the Noodles: Bring a large pot of salted water to boil. Add rice noodles and cook according to package instructions (about 4-5 minutes). Drain and rinse under cold water.
- 2. Prepare the Sauce: In a medium bowl, whisk together peanut butter, soy sauce, minced garlic, grated ginger, and a splash of hot water until smooth. Adjust consistency with more water if needed.
- 3. Sauté Aromatics: In a large skillet over medium heat, add vegetable oil. Once hot, add minced garlic and grated ginger; sauté for about one minute until fragrant.
- 4. Combine Everything: Add cooked noodles to the skillet with sautéed aromatics. Pour peanut sauce over and gently toss until evenly coated.
- 5. Toss in Veggies: Stir in sliced peppers or carrots and let warm through for about two minutes while tossing everything together.
- 6. Serve & Enjoy: Plate the peanut noodles and top with chopped cilantro and sliced green onions before serving.
