Description

Peanut noodles are a creamy, nutty delight that brings comfort to your table in just 30 minutes. Perfect for busy weeknights or leisurely weekends, this dish is both satisfying and versatile.

Ingredients

Scale
  • 8 oz rice noodles (thin rice vermicelli)
  • 1/2 cup smooth unsweetened peanut butter
  • 1/4 cup low-sodium soy sauce
  • 3 cloves fresh garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp vegetable oil

For the Toppings:

  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup sliced green onions
  • 1 cup sliced peppers or carrots

Instructions

  1. 1. Cook the Noodles: Bring a large pot of salted water to boil. Add rice noodles and cook according to package instructions (about 4-5 minutes). Drain and rinse under cold water.
  2. 2. Prepare the Sauce: In a medium bowl, whisk together peanut butter, soy sauce, minced garlic, grated ginger, and a splash of hot water until smooth. Adjust consistency with more water if needed.
  3. 3. Sauté Aromatics: In a large skillet over medium heat, add vegetable oil. Once hot, add minced garlic and grated ginger; sauté for about one minute until fragrant.
  4. 4. Combine Everything: Add cooked noodles to the skillet with sautéed aromatics. Pour peanut sauce over and gently toss until evenly coated.
  5. 5. Toss in Veggies: Stir in sliced peppers or carrots and let warm through for about two minutes while tossing everything together.
  6. 6. Serve & Enjoy: Plate the peanut noodles and top with chopped cilantro and sliced green onions before serving.
