  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. 1. In a large pot over medium heat, add the Italian sausage. Cook until browned and cooked through, about 5 minutes. Break it up as it cooks.
  2. 2. Remove the sausage from the pot, leaving the drippings. Add chopped onion, diced carrots, and chopped celery to the pot. Sauté until softened, approximately 5 minutes.
  3. 3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. 4. Return the cooked sausage to the pot and pour in chicken broth. Bring to a gentle simmer and let bubble for about 10 minutes.
