- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 4 cups low sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Instructions
- 1. In a large pot over medium heat, add the Italian sausage. Cook until browned and cooked through, about 5 minutes. Break it up as it cooks.
- 2. Remove the sausage from the pot, leaving the drippings. Add chopped onion, diced carrots, and chopped celery to the pot. Sauté until softened, approximately 5 minutes.
- 3. Stir in minced garlic and cook for an additional minute until fragrant.
- 4. Return the cooked sausage to the pot and pour in chicken broth. Bring to a gentle simmer and let bubble for about 10 minutes.
- 5. Stir in heavy cream and cook for another 5 minutes until well combined.
- 6. Add fresh spinach right before serving and allow it to wilt slightly. Ladle into bowls and sprinkle with grated Parmesan cheese.
