- 2 cups fresh cranberries
- 1/2 cup pure maple syrup
- 1/4 cup unsalted butter (melted) or olive oil
- 2 tbsp fresh thyme (chopped)
- 2 tbsp fresh rosemary (chopped)
- 4 cloves garlic (minced)
- Salt and pepper to taste

- 2 tbsp balsamic vinegar

- 1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly spray a roasting pan with nonstick cooking spray.
- 2. Prepare the Chicken: Rinse the whole chicken under cold water and pat it dry with paper towels. Season generously with salt and pepper inside and out.
- 3. Make the Glaze: In a mixing bowl, combine fresh cranberries, maple syrup, balsamic vinegar, minced garlic, melted butter or olive oil, thyme, and rosemary. Mix well until combined.
- 4. Coat the Chicken: Place the chicken breast-side up in the roasting pan. Pour half of the cranberry-maple mixture over it, ensuring it's well-coated.
- 5. Roast Away: Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches at least 165°F (74°C). Baste occasionally with juices from the pan for crispy skin.
- 6. Serve It Up: Let the chicken rest for about ten minutes before carving. Drizzle with leftover cranberry-maple sauce before serving.
