  • 1 can (14.5 oz) diced tomatoes in juice

  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin (adjust to taste)
  • 1 tsp dried thyme (adjust to taste)
  • Salt and pepper to taste

  3. In a large pot over medium heat, drizzle olive oil and add diced onions, carrots, and celery. Cook for about five minutes until softened.
