  • 1 cup wild rice blend
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or milk
  • Salt and pepper to taste

Instructions

For the Soup:

  1. 1. Prepare Your Ingredients: Dice the chicken breasts into bite-sized pieces. Chop the carrots, celery, onion, and garlic.
  2. 2. Sauté the Vegetables: In a large pot over medium heat, add 2 tbsp olive oil. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until softened.
  3. 3. Add Garlic and Chicken: Stir in minced garlic followed by the diced chicken pieces. Cook until the chicken is no longer pink (about 5 minutes).
  4. 4. Add Broth and Rice: Pour in the chicken broth and wild rice blend. Bring to a boil then reduce heat to simmer for about 40-45 minutes until the rice is tender.
