- 3–4 boneless, skinless chicken breasts
- 1 cup wild rice blend
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 cup heavy cream or milk
- Salt and pepper to taste
Instructions
For the Soup:
- 1. Prepare Your Ingredients: Dice the chicken breasts into bite-sized pieces. Chop the carrots, celery, onion, and garlic.
- 2. Sauté the Vegetables: In a large pot over medium heat, add 2 tbsp olive oil. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until softened.
- 3. Add Garlic and Chicken: Stir in minced garlic followed by the diced chicken pieces. Cook until the chicken is no longer pink (about 5 minutes).
- 4. Add Broth and Rice: Pour in the chicken broth and wild rice blend. Bring to a boil then reduce heat to simmer for about 40-45 minutes until the rice is tender.
- 5. Stir in Cream: Once the rice has cooked perfectly, stir in the cream or milk. Let it simmer for another couple of minutes while stirring occasionally.
- 6. Season and Serve: Season with salt and pepper to taste. Serve hot in bowls with crusty bread on the side if desired.
