- 3–4 boneless, skinless chicken breasts
- 1 cup wild rice blend
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- 1. Prepare Your Ingredients
- Dice the chicken into bite-sized pieces and chop the vegetables (carrots, celery, onion).
- 2. Sauté Your Veggies
- In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until tender (about 5 minutes).
