  • 6 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  2. Dice the chicken into bite-sized pieces and chop the vegetables (carrots, celery, onion).

  4. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until tender (about 5 minutes).
