For the Sweet Potatoes:

  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • Salt, to taste

For the Filling:

  • 1 can (15 oz) black beans, rinsed and drained
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp paprika
  • Pinch of salt

For Topping:

  • 1 ripe avocado, sliced

Instructions

For the Sweet Potatoes:

  1. 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2. Wash and dry the sweet potatoes. Pierce each potato several times with a fork to allow steam to escape during baking.
  3. 3. Place the sweet potatoes on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for about 45 minutes or until tender when pierced with a fork.

For the Filling:

  1. 4. While the sweet potatoes roast, combine the rinsed black beans, lime juice, cumin, paprika, and a pinch of salt in a bowl.

  3. 5. Once roasted, let the sweet potatoes cool slightly before cutting them open lengthwise. Fluff the insides gently with a fork and spoon in the seasoned black bean mixture.
