- 2 tbsp olive oil
- Salt, to taste
For the Filling:
- 1 can (15 oz) black beans, rinsed and drained
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp paprika
- Pinch of salt
For Topping:
- 1 ripe avocado, sliced
Instructions
For the Sweet Potatoes:
- 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. Wash and dry the sweet potatoes. Pierce each potato several times with a fork to allow steam to escape during baking.
- 3. Place the sweet potatoes on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for about 45 minutes or until tender when pierced with a fork.
For the Filling:
- 4. While the sweet potatoes roast, combine the rinsed black beans, lime juice, cumin, paprika, and a pinch of salt in a bowl.
- Assembly:
- 5. Once roasted, let the sweet potatoes cool slightly before cutting them open lengthwise. Fluff the insides gently with a fork and spoon in the seasoned black bean mixture.
- 6. Add slices of avocado on top of each stuffed sweet potato. Optionally, squeeze additional lime juice over for extra flavor.
