For the Soup:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
- 1. Sauté Your Veggies
- Heat a large pot over medium heat. Add olive oil, followed by chopped onion, carrots, and celery. Sauté until softened and fragrant—about 5 minutes.
- 2. Add Garlic
- Stir in minced garlic and cook for another minute until aromatic.
- 3. Toss in Zucchini & Tomatoes
- Add diced zucchini and canned tomatoes (with juice). Stir well to combine.
- 4. Pour In Broth & Beans
- Add vegetable broth and rinsed cannellini beans. Bring to a gentle boil while stirring occasionally.
- 5. Season It Up
- Sprinkle in Italian seasoning along with salt and pepper to taste. Let the soup simmer on low heat for about 20 minutes.
- 6. Serve & Enjoy
