For the Soup:

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. 1. Sauté Your Veggies
  2. Heat a large pot over medium heat. Add olive oil, followed by chopped onion, carrots, and celery. Sauté until softened and fragrant—about 5 minutes.
  3. 2. Add Garlic
  4. Stir in minced garlic and cook for another minute until aromatic.
  5. 3. Toss in Zucchini & Tomatoes
  6. Add diced zucchini and canned tomatoes (with juice). Stir well to combine.
  7. 4. Pour In Broth & Beans
  8. Add vegetable broth and rinsed cannellini beans. Bring to a gentle boil while stirring occasionally.

  10. Sprinkle in Italian seasoning along with salt and pepper to taste. Let the soup simmer on low heat for about 20 minutes.
