For the Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

For the Pancakes:

  1. 1. In a bowl, combine pancake mix with milk and eggs according to package instructions. Whisk until smooth and stir in melted butter.
  2. 2. In a separate small bowl, mix granulated sugar and ground cinnamon until well combined.
  3. 3. Preheat a skillet or griddle over medium heat. Pour about half a cup of pancake batter onto the pan.
  4. 4. While the batter is still wet on top, sprinkle a small amount of the cinnamon-sugar mixture in the center.
  5. 5. Using a toothpick or skewer, gently swirl the cinnamon-sugar mixture into the batter without over-mixing.
