For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
For the Pancakes:
- 1. In a bowl, combine pancake mix with milk and eggs according to package instructions. Whisk until smooth and stir in melted butter.
- 2. In a separate small bowl, mix granulated sugar and ground cinnamon until well combined.
- 3. Preheat a skillet or griddle over medium heat. Pour about half a cup of pancake batter onto the pan.
- 4. While the batter is still wet on top, sprinkle a small amount of the cinnamon-sugar mixture in the center.
- 5. Using a toothpick or skewer, gently swirl the cinnamon-sugar mixture into the batter without over-mixing.
- 6. Cook until bubbles form on top (about two minutes), then flip carefully and cook until golden brown (about another minute).
For the Cream Cheese Icing:
- 1. While pancakes cook, beat softened cream cheese with powdered sugar and vanilla extract until smooth. Adjust consistency if needed by adding more powdered sugar or a splash of milk.
