Instructions
For the Cookie Dough:
- 1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- 2. In a large mixing bowl, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- 3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- 4. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture until just combined.
- 5. Fold in semi-sweet chocolate chips until evenly distributed.
For the Cheesecake Filling:
- 1. In a separate bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Assembling the Cookies:
- 1. Scoop about two tablespoons of cookie dough and flatten into a disc in your palm.
- 2. Place about one tablespoon of cheesecake filling in the center before folding the dough edges around it to seal well.
- 3. Roll back into balls carefully and place them on prepared baking sheets with space between them.
- 4. Bake for 12-15 minutes or until golden around the edges but still soft in the center. Cool slightly on baking sheets before transferring to wire racks.
