Instructions

For the Cookie Dough:

  1. 1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. 2. In a large mixing bowl, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. 3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. 4. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture until just combined.

For the Cheesecake Filling:

  3. 1. Scoop about two tablespoons of cookie dough and flatten into a disc in your palm.
