For the Filling:
- 1 lb ground beef (lean)
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 2 tbsp ketchup
- 2 tbsp mustard

- 12 egg roll wrappers
- Oil for frying
Instructions
For the Filling:
- 1. In a skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks. Drain excess fat and set aside.
- 2. In the same skillet, add diced onions and sauté until translucent, about 5 minutes.
- 3. Return the cooked beef to the skillet with onions. Stir in shredded cheese, ketchup, and mustard until well combined. Remove from heat once the cheese melts.
For Assembly:
- 4. Lay an egg roll wrapper in a diamond shape. Place about two tablespoons of the cheeseburger mixture in the center. Fold up the bottom corner over the filling, then roll tightly while folding in the sides.
- 5. In a deep frying pan or pot, heat about two inches of oil over medium-high heat until it reaches around 350°F (175°C).
- 6. Carefully place each filled egg roll into hot oil (do not overcrowd). Fry until golden brown, about three minutes per side. Drain on paper towels.
