- 9 oz cheese tortellini (fresh or frozen)
- 2 tbsp olive oil
- 2 cloves minced garlic
- 14.5 oz diced tomatoes (fire-roasted recommended)
- 1/4 cup fresh basil (or less if using dried)
- 1/2 cup grated Parmesan cheese
For the Sauce:
- 1 cup heavy cream (substitute with half-and-half if desired)
- Salt and pepper to taste
Instructions
- 1. Cook the Tortellini
- Boil salted water in a large pot. Add cheese tortellini and cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
- 2. Sauté Garlic
- In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, about one minute.
- 3. Add Tomatoes
- Stir in diced tomatoes (including juice) along with salt and pepper. Let simmer on low heat for about five minutes.
- 4. Stir in Cream
- Slowly add heavy cream to the tomato mixture while keeping on low heat. Let bubble gently for two minutes.
- 5. Combine Tortellini
- Once the sauce has thickened slightly, add cooked tortellini to the skillet, tossing gently until coated.
- 6. Garnish and Serve
- Sprinkle fresh basil and grated Parmesan cheese on top before serving immediately.
