  • 9 oz cheese tortellini (fresh or frozen)
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • 14.5 oz diced tomatoes (fire-roasted recommended)
  • 1/4 cup fresh basil (or less if using dried)
  • 1/2 cup grated Parmesan cheese

For the Sauce:

  • 1 cup heavy cream (substitute with half-and-half if desired)
  • Salt and pepper to taste

Instructions

  1. 1. Cook the Tortellini
  2. Boil salted water in a large pot. Add cheese tortellini and cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
  3. 2. Sauté Garlic
  4. In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, about one minute.
  5. 3. Add Tomatoes
  6. Stir in diced tomatoes (including juice) along with salt and pepper. Let simmer on low heat for about five minutes.
  7. 4. Stir in Cream
  8. Slowly add heavy cream to the tomato mixture while keeping on low heat. Let bubble gently for two minutes.
  9. 5. Combine Tortellini
  10. Once the sauce has thickened slightly, add cooked tortellini to the skillet, tossing gently until coated.
  11. 6. Garnish and Serve
  12. Sprinkle fresh basil and grated Parmesan cheese on top before serving immediately.
