- 8 oz linguine or fettuccine
- 1 lb shrimp, peeled and deveined
For the Sauce:
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 cup bell peppers, sliced (mix of red and green)
- 1/2 cup grated Parmesan cheese
Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to boil. Cook the pasta according to package instructions until al dente. Drain and reserve half a cup of pasta water.
- 2. Sauté the Shrimp: In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add shrimp seasoned with Cajun seasoning and cook until they turn pink and opaque (about 2 minutes per side). Remove from skillet and set aside.
- 3. Add Veggies: In the same skillet, add sliced bell peppers. Sauté for about four minutes until tender but still crunchy.
- 4. Create the Sauce: Pour in heavy cream and scrape up browned bits from the skillet. Stir in additional Cajun seasoning if desired. Let it simmer until slightly thickened.
- 5. Combine Everything: Return cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything together until well combined.
- 6. Serve It Up: Plate the Cajun shrimp pasta, top with grated Parmesan cheese, and garnish with chopped parsley if desired.
