- 1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add spaghetti and cook according to package instructions until al dente.
- 2. Reserve Pasta Water: Before draining, reserve about 1 cup of pasta water for later use.
- 3. Grate Cheese: While the pasta cooks, finely grate the Pecorino Romano cheese.
- 4. Combine Pasta and Cheese: Drain the pasta and return it to the pot over low heat. Gradually add half of the reserved pasta water and most of the grated cheese while stirring continuously until you achieve a creamy texture.
- 5. Add Pepper: Stir in freshly cracked black pepper, adjusting to taste for desired spiciness.
- 6. Serve Immediately: Plate your Cacio e Pepe and top with remaining cheese and additional pepper if desired. Enjoy hot!
