Ingredients

Scale

For the Fries:

  • 1 bag (24 oz) frozen French fries

For the Poached Eggs:

  • 4 large eggs

For the Gravy:

  • 2 cups savory gravy (store-bought or homemade)

For the Hollandaise Sauce:

  • 1/2 cup unsalted butter
  • 3 large egg yolks
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

For the Fries:

  1. 1. Preheat your oven according to the frozen fries package instructions (usually around 425°F / 220°C).
  2. 2. Spread frozen fries on a baking sheet in a single layer and bake until golden brown and crispy, about 20-25 minutes.

For the Poached Eggs:

  1. 1. While fries are baking, bring a pot of water to a gentle simmer over medium heat.
  2. 2. Crack each egg into a small bowl and gently slip them into the water one at a time.
  3. 3. Cook for about 3 minutes or until whites are set but yolks remain runny. Remove with a slotted spoon.

For the Gravy:

  1. 1. In a saucepan over medium heat, bring the gravy to a gentle simmer, stirring occasionally.

For the Hollandaise Sauce:

  1. 1. Melt unsalted butter in a small saucepan over low heat until fully melted but not browned.
  2. 2. In another bowl, whisk together egg yolks and lemon juice until pale and frothy.
  3. 3. Gradually drizzle in melted butter while whisking continuously until smooth and creamy. Season with salt and pepper.
  4. Assembly:
  5. 1. On serving plates, layer crispy fries at the bottom.
  6. 2. Top generously with hot gravy followed by poached eggs.
  7. 3. Drizzle hollandaise sauce over everything and season with additional salt and pepper if desired.
