- 2 lime wedges for serving
Instructions
For the Chicken:
- 1. Preheat your grill or oven to 400°F (200°C). If using an oven, prepare a baking dish with nonstick spray.
- 2. Season chicken breasts generously with salt and pepper. Optionally add garlic powder or paprika for flavor.
- 3. Grill chicken for about 6-7 minutes on each side until fully cooked (internal temperature of 165°F / 74°C). If baking, cook for 20-25 minutes.
- 4. Brush BBQ sauce over cooked chicken and let it caramelize on the grill or bake for an additional few minutes.
For the Tacos:
- 5. While chicken cooks, grill pineapple chunks for about two minutes per side until charred.
- 6. Slice grilled chicken into bite-sized pieces and assemble tacos: place chicken in tortillas, add grilled pineapple, shredded cabbage, and cilantro.
