For the Chicken:
- 3–4 boneless, skinless chicken breasts
- Salt to taste
- Pepper to taste
For the Rice:
- 1 cup jasmine or basmati rice
For the Vegetables:
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
For the Sauce:
- 3 tbsp Sriracha
- 2 tbsp honey
- 1/4 cup mayonnaise
Instructions
For the Rice:
- 1. Cook rice according to package instructions (approximately 15 minutes on medium heat). Fluff with a fork when done.
For the Chicken:
- 2. Heat oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
- 3. Cook each side for 5-7 minutes until golden brown and cooked through. Remove from skillet and slice into strips.
For the Sauce:
- 4. In a bowl, mix Sriracha, honey, and mayonnaise. Adjust ingredients to achieve desired flavor balance.
For the Vegetables:
- 5. Cut mixed vegetables into bite-sized pieces.
- 6. In the same skillet used for chicken, add chopped vegetables and sauté until tender but still crunchy (about 3 minutes).
- To Serve:
- 7. Layer rice at the bottom of bowls, add sautéed veggies, top with sliced chicken, and drizzle with bang bang sauce.
- 8. Serve immediately while hot, garnished with extra sauce if desired.
